Sunday was my off day.

In more ways than one.  H and I were go-go-going all day yesterday, so I didn't get a chance to come on here.

Truth

I got hungry around 7:30, but H didn't eat until just before 5, so he didn't care about eating supper.  Therefore, supper for one.

I caved...

I was so hungry, and H was still in bed. I told him I was leaving.

I went to Taco Bell.  BUT...

I want out of the house!!!!!

Today has been a boring day... I really want to go somewhere, but hubby is really tired and is napping... Hopefully, he will wake up soon and we can get out of the house.

Wrap it Up!

By the way:

Before I go to bed, I thought I would show you what I did tonight.  Here is the food I prepped for the next few days.

I am SORE this morning!!!

I am walking kind of slow, because I am sore from my karate class last night. That definitely kicked my butt more that the P90X stuff. It is amazing what that mob mentality will do for your effort level! :)

Kiai!

I had an awesome night tonight!!! I babysat Crystal's kids, and Crys was cool enough to let me lug them all around town! Sorta...

Very Late Lunch

Me and Crys had a great day!!! We got to hang out for 6 whole hours!!! Then I went to pick up my nephews and took them to my MawMaw.

Maybe those few bites of protein held me over... or maybe the coffee sated my hunger for a while, but I didn't get hungry again until 3:30 in the afternoon. So I had the rest of my Kind Bar... SOOO Good!!! Yum!

That held me over for about an hour and a half, because I made it all the way back to Crystal's and hung out til they left. The kids weren't hungry yet, but I was starving!!! So I made myself a open-face turkey sammich :) with brown mustard, half an avocado, and Oscar Meyer turkey breast (I know, high in sodium.... what do you want from me???).  I had a string cheese, vegetable chips (Earthfare brand), and the other half of the avocado on the side.

I ate the avocado and the sandwich with a fork and knife because they were my favorite part of the meal.... The avocado first, then the chips (not my favorite chips by EF, {um, okra chips, of course!} but a neccessary evil. Gotta get the veggies in!), then the cheese, saving the sandwich for last cause I love it!!! This was a 560 calorie lunch!!!  Whoa buddy!  But I still have plenty of calorie for the day...

And I have something to do later tonight... So excited... will tell you after I do it!!!  ;) Whoot whoot...

Do you have anything exciting planned to do???

Thirsty Thursday and a Cookie Giveaway!

I was up and rip-roaring to go at 7:51 this morning.  Talked to my grandmother on the phone for about 20 minutes, which just makes the whole day better! Then, I got up, gve Boo a bath, took a shower myself, and started to feel "hunger pangs" :) (Obscure reference... I will send cookies to whoever tells me the "quotee" first!! In a comment!!!)

So I went into my bedroom because I knew I had a treat in my purse.... Dark Chocolate Cherry Kind Bar!

I ate 2 bites of it (about a quarter of the bar, what you see is the part that I left) and that settled my stomach, so I saved the rest of it for a snack later. I went about my business and finished getting ready.

Here is Boo patiently waiting for us to go. She loves going in the car!

I am supposed to babysit tonight, so I went ahead and called Crystal, who I am babysitting for, and arranged to come spend time with her instead of just her kids ;) She, of course, bounded out of bed and got herself all gussied up for me to come over... (Read: Was totally relaxed when I walked in and actually refused to let me take pictures of her because of her state of relaxation. ;) Pics will come later of our "Girl's Day."

When I got to Crystal's we had a smorgasbord, a motley assortment, a salmagundi (!! Look it up, It's a word!!!), if you will, of fruit...

In this bowl, there are 5 chunks of pineapple, 5 chunks of canteloupe, 3 grapefruit wedges, 8 raspberries, 1/2 a kiwi (with the skin on! Who knew? I barely even noticed it there. Just like eating a peach...), 1 strawberry, cut in half, and a tablespoon of pomegranate seeds. I ate it with a big glass of water and then drank my coffee with no sweetener, just 2 tablespoons of Cinnabon non-dairy creamer (35 cal/tbsp). I also had some pomegranate juice, but I have not drank it yet.

After all that, my breakfast, including the piece of bar, was only 256 calories... so I decided to add a little protein... Cottage Cheese amuse-bouche, anyone?

Tried 3 ways. The one in the back is cottage cheese with just black pepper on it. This Crystal's favorite way to eat it... Then, I put a spot of homemade granola (some that I made for Crystal a while ago) on one, and some pomegranate seeds on another.  Ok, I have never liked cottage cheese... I think it is gross, the taste of it combined with the texture totally throws me off my game, but I think you should try things repetitively to know when your tastes change. Well, they must have changed because there was no emesis in site.  Typically I have trouble even having it on my tongue, but this time was much better.  I tried Crystal's way first, as this one was the one with fewest addatives.  It was ok, but still the texture kills!  Then the pomegranate. Much better, the chew from the pomegranate seeds made it much easier... But the winner?  Definitely the granola. The taste of it overpowered the cottage cheese... making it much easier for me.  So I got brave...

Uh... not gonna happen.  I had 4 small bites of this plate, and then I couldn't do it anymore. I just don't like it. But now I know that I can stand it.  If I had a bowl of granola and instead of yogurt, I added about half a container of cottage cheese, I could eat it. But this was just too much cottage cheese for the amount of granola. And I was not that hungry; I wasn't going to eat it when I was not enjoying it. So, I scraped off all the granola and fixed it so Crystal could eat it.  I ate about a quarter of a 4 oz container.

This is what happens when you sign up for something that you really didn't want to do in the first place!

In better news, look what Crystal gave Boo!!!

Punk Rock Puppy... But she kind of looks like a fat girl who tried to squeeze into a mini skirt...  Hahaha...

Taco Night

I made supper tonight a little heavy.  We had kids over, so I made sure to make something that they would like... TACOS!!!

Of course, I did not have any chips/tortillas.  I wanted all my calories to be in food, not filler!

I had 2 cups of shredded taco chicken, 1 cup of homemade black beans, 1 cup homemade Mexican rice (sauteed onions, garlic, and bell pepper, added chicken broth, brought to a boil, added rice, turned off), 1 tbsp of salsa, and 2 tbsp of sour cream. I am going to swap to Plain Yogurt soon, but we needed to get rid of the sour cream anyway.  It was REALLY good!!!  See, here is Boo, wishing I would give her some :)

Not gonna happen, Boo-Boo!!! But, oh, those puppy dog eyes!

I am not going to post the calories for each item anymore, as that can get quite monotonous. I have started logging each item into Sharecare (in cooperation with CalorieKing), and will report those calories.
My ShareCare says that this meal was a WHOPPING 911 calories!!! Ironically, the rice was the most calories, coming in at 343! Sooo, I guess I won't be doing that anymore... If I do, it will be far smaller portions... like half. It is a shame, too, because Mexican food is my very favorite!!! :0(

Once I saw how many calories that was, I knew I had to do some exercise... So here came Tony!!!  P90X's CardioX was on the menu for tonight... and here is what I look like now...

Wow, am I red!!! Evidence that I worked hard :)
On the upside, I felt much better doing Cardio tonight! It had to have been the water... I drank 3 HUGE glasses of water today.... At least 48 oz, and I am about to go drink more...

Alright... time for a cold shower and getting into bed with my baby, who has been asleep since 7. He didn't even eat supper!!!  : /   Don't worry!!! I made him a plate and set it aside :)

So that brings my calories in today to 1588! Whoa, The most in a week!
And my calories out to 855 according to ShareCare... ( I wish I had a Heart Rate/Calorie Monitor, though!!!)
And my net for today: 733???  Is that possible??? I think I need a redo!!!

PS: I love comments!

PPS: I love my followers too ;)

Pack Walk

Got up at 10 this morning and had a Dole Mandarin Orange Cup. 80 calories.

At 1:30 I went for a pack walk with Boo-Boo (the picture up top is her once we came back lol) and my Sharecare logged the 20 minute walk as 236 calories... So technically today I have logged out more calories than I have logged in.

Tuna is my lunch today. Added 1 tbsp mayo, 2 tbsp pickle relish, 1 tbsp Louisiana Hot sauce, and some spices. Eating it with Kashi TLC Original Pita Chips YUM! and a laughing cow swiss cheese. Total calories : 415...

Eww, my tuna looks disgusting in the picture... but it tasted so good... Spicy! My cheese was just ok though... I probably need one with a different flavor so I can mix it up.

But my calories are kinda low... maybe I should add something to lunch...  We are low on veggies in the house, or I would supplement with a big bowl... I don't really want a cookie... I would rather save those for when I need a treat. I always crave sweets after supper so I want to avoid using those empty calories for when I crave them.  I am just proud that I found a cookie so low on calories that I can make and know exactly what is in them. I wish wish that I knew what I could substitute for the Crisco so they would be a bit less fatty.

YOGURT!

Stoneyfield 2% Vanilla Yogurt with 1 tbsp coconut, 1 tbsp toasted almond slivers, and 1 tbsp bama strawberry jelly, on the side so I can get a little bit with every bite.... But, let's face it, by the end, I will have swirled it all together... :)

190 calories for the yogurt. Brings my calories so far to 680. Not bad. Doing pretty good today! :)

Tuesday. The End.

So I had 2 of my Ginger Snaps. - 68 calories

And I had a bowl of Kashi Heart 2 Heart. 120 calories plus a half cup of milk - 65 cal

1092 calories for the day, plus the calories from my wine, 137!!! So I have hit my 1200 calories quota. I am going to go get in bed with my hubby. Bed time... at 11!!! Practically normal bedtime!   Until tomorrow...

A Midwinter Night's Eve

Ginger snaps!!!

So, as you can see, I finished baking my cookies.

What started out as a lump of brown, molasses smelling clay, turned into this:

92 little lumps of cookie dough, which in turn filled my kitchen counters from left to right.

A door-to-door salesperson came by and I politely turned her down by giving her a few cookies. She just oohed and awwwed over them, so they must be good.  I tried one of them myself and was very pleasantly surprised. They are fantastic and will go very well with my "Pumpkin Pie".

Ingredients: Yield: 92 cookies units: us I Metric
3/4 cup shortening - 1058 cal
1 cup light brown sugar
firmly packed - 830 cal
I egg - 70 cal
1/4 teaspoon salt 4 tablespoons molasses - 240
2 1/4 cups flour - 900 cal
2 teaspoons baking soda
1/2 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon ground ginger

I used a 1/2 tablespoon measure to get equal amounts for every cookie it made. Exactly 92 cookies! This brings the total calories per cookie to 34.

The numbers of these cookies are quickly dwindling. He-who-shall-not-be-named has announced that these cookies are the best thing that I have ever made at his house, but we agree that they are still a little (just a smidge) too sweet. I think next time I will cut down on the brown sugar to 3/4 cup and see how it does. They are very good though. I will probably have one later :)

Whilst I was making supper, I imbibed a tad.

4 oz of Moscato D'Asti. Very light and sweet. The only wine that I really like.

And then I started cooking properly.  On the menu tonight was lentils.

One large onion and 4 cloves of garlic sauteed in a tbsp of olive oil before adding the lentils and water.  I accidentally added thyme thinking it was my ground coriander... oh well, it was not that bad.  Over half of it is gone already (it added that whole one pound bag).

I also made rice... more on that in a minute.

I also made a salad with supergreens (Organic Girl Brand), red bell pepper, green bell pepper, and onion.

I had literally 8 craisins left, so I tossed those on there, too. An exciting little surprise when we get one!

My plate. 1/2 a cup of rice, 1 Pillsbury crescent roll, and 2 cups of salad with 2 tbsp of Greek dressing. I also had a 1/2 cup of lentils, which I forgot to take a picture of... sorry : -/   I didn't like the rice. I made it the same as I made the couscous last night, but I added the juice of 1 more lemon... Not a good idea. Too acidic. I also put too much water in it. (1.5 cups water to 1 cup rice is the ratio they recommend... I made it 2 to 1 the way I make normal rice... my bad.) So H had my share.

Roll - 100 cal
rice - 20 cal
salad - 60 cal
dressing - 110 cal
lentils - 110 cal

So, dinner was 400 calories.

Breakfast: Diva pancake:  325 calories
Also had a cookie: 34 calories
Was getting hungry while supper was cooking and waiting for H to get home, so I had  4 pita chips and a laughing cow: 80 calories

Only 839 calories for the day.  I get up late, so I eat breakfast late.  I don't feel hungry or I would fix something before the fellas get home... I spend time with H til he goes to bed (around 10), then stay up to clean dishes, fold clothes, blog, look up recipes. Go to sleep around midnight. Sometimes a little later. Then wake up at 4 with H, then 6 with Boo (her scheduled feeding time), then when she needs to go out 2 hours later... By the time I feel rested it is almost noon... I have always liked my sleep, but I think this is hindering my a little bit.  I think I need to start waking up early instead of going to bed late... Maybe that needs to be one of my goals as well... Go to bed between 8-9 and getting up by 6.

I think I will have a bowl of cereal later. The cinnamon biscuits maybe. This would bring my total up to about 1100. 800 is just too low. I don't want to start making myself feel deprived. Then I might cheat a little too exuberantly.

259.0 lbs!!!

I got up this morning rip and rearing to go. Opened the computer. Flip to Youtube and look up Adele... The dreaded banner across the top of a youtube video... Is anyone else having a problem with their youtube??? Amongst other things, my youtube is being retarded and says that I need to download Adobe Flash Player 5??? Anyone know anything about this???

 See all the oatmeal????

Anyway. I persevered and made my Mexican Hot Chocolate Diva Pancake!!! It was yummy... The texture was not what I was expecting, but still nice. Here is the calorie breakdown:

1 egg - 70 cal
1/4 cup oatmeal - 75
pinch baking powder
1 tbsp chocolate powder
pinch red pepper
cinnamon (SUPERFOOD!)
drop vanilla
1 tbsp maple syrup - 50 cal

Total of 325 cals for breakfast

P90X-treme dessert :)

Harharhar... a punny title!

I did my Kenpo X, and H, graciously, took some pictures so I can prove it.  I felt fine during the warm-up but about 10 minutes into the actual exercise I felt like DooDoo Brown... I did it the best I could. I was sooooooo thirsty the whole time though... Maybe I just need to up the amount of water I have been drinking. Come to think of it, I have not been drinking much at all... Not even juice in the mornings. The cartons just pack to many calories for the punch. So I will try to up my intake of fluid tomorrow, and instead of Kenpo, I am going to do Cardio. That Tony just busts my Schweddy Balls. Every time! However, I usually feel way better post workout, and during, than I did tonight. Has to be either calories or water...

Any-whoselles.  After the workout, I made "Pumpkin Pie", courtesy of Kath at www.katheats.com , for  He-who-shall-not-be-named (as his people called my people and requested to no longer be referred to on a public domain ;) and myself. This time I added a little drizzle of honey and 2 teaspoons of Stoneyfield Organic French Vanilla 2% Yogurt. So good!!!

Eaten with a little spoon, to make me take small bites and enjoy it properly. Here is Boo enjoying her snack....

It is 12:36 in the morning and I finally finished cleaning up the kitchen. H and Boo have been in bed for 2 hours while I cleaned and made something yummy.  I fixed H's lunch and then got to thinking about cookies... ginger snaps to be exact... Not that I had any tonight. I did mix the batter though!

I got the recipe from http://www.food.com/recipe/ginger-snaps-421992 . It says the cookies are 73 calories each, but I am going to add up all the calories from the individual ingredients, and will report back on this tomorrow.

I also made a Mexican Hot Chocolate Diva Pancake for tomorrow morning. I got this recipe from http://www.katheats.com/a-southern-autumn-affair . I love Kath! She is an excellent blogger and is my inspiration for doing this blog!

My batter:

Ok, seriously.
It is 12:51 now... I should go to bed :) For real.  Laterzzzz.
