Think I faked again?

Think again!!!!

I just didn't have breakfast this morning. I woke up, said hi to everyone, then started getting ready to go grocery shopping! Sam's Club!!! Whoot whoot!

We did a heck of a lot of grocery shopping. We didn't get home until around 1PM! We were all famished by then, so all the grownups dove headfirst into lunch/supper.


This salad is So! Good! What is in it, you ask?

1 Romaine lettuce Heart
The same amount of spinach
2 1/2 carrots,shredded (there were three, but the other half got pilfered by rugrat/preteens :)
3 bell peppers, yellow, orange, red
1 small zucchini
1 yellow hook neck squash
2 apples
2 1/2 celery stalks (again, pilferage happened :)
1 medium onion
1 english cucumber (yes, the WHOLE thing)


While I was slicing and dicing, Big H was preparing the meat! No special cut, just chunks of beef. He bite-sized them, added almost all of the veggies I used in the salad, plus 2 cloves garlic, and a bunch of spices.  He will not share his recipe with me.  I guess I need to do more recon  ;-D  I also made a couscous/quinoa mix with the juice of 1 lemon, a lot of thyme, a lot of lemon pepper, and a little salt. It went great with the sauce, the Au Jeau, if you will, from the beef tips.  Everything was great!!!  Only the salad got mixed reviews.

Someone else made some corn on the cob. Yummy Lemoney sweet corn on the cob!

Niecey was not crazy about it. Veggies are NOT her fave.. she much prefers carrots and celery sticks.


Nephew liked it, though! I had to snag a picture of their opinions. And he looks like a rock star with that hair!!! I <3 it!


After lunch/dinner... Lunner???... I headed back into the kitchen to stir up some food prep. Look at all the colors!


2 bags of mango (2 bags already went into the freezer), 3 bags of cantaloupe, 6 bags of carrots sticks, 1 bag of raspberries, 2 bags of blueberries, and 3 bags of celery sticks. 

It is just so much easier to snack if it is already pre-cut and pre-rinsed.


I know that this is not the best use of baggies, but I promise I will wash and reuse them!


Our stocked fruit bowl. Pineapple, Papaya, Oranges, Pears (Green and Asian), Plums, and Lots of Bananas! We go through these like water!


Thought you might like a view of a well-stocked fridge. Mostly everything in here is good for you. On the top shelf, milk, some Lite Pom Juice, Apple juice, some Lipton tea in the back. The orange juice is back there hiding too!

On the second shelf, is Hart's lunch, The last of the Sabra hummus, an almost empty thing of yogurt (I forgot to get more!), shredded coconut, eggs, salsa, and a wide array of pickles behind the up-front items.

The little drawer is the miscellaneous drawer.  Shredded Colby Cheese, SmartBalance Sticks. The two "bad for you items" are in here.  A whop can of orange rolls, and a whop can of crescent rolls.  We also have some saltfish and our newest item: Smoked Salmon. I love it! Surprisingly. I was kind of skeptical at first, but as soon as w got home, before we started cooking, we were hungry!!!  We snacked!

Out came the hummus and the new bag of sandwich thins we bought. Hmm... Hummus Smoked Salmich Thin was born!!!!  Yum! Kind of high-cal for a snack, but a great lunch! I just used 1 sliced of salmon, and also put a couple pieces of spinach on it. Sorry no picture! It was gone too quickly.


Below the little drawer, we have some arugula, egg beater and homemade cranberry and blueberry sauces. 
Then, there are some sliced mushrooms, the leftover salad (in that big yellow tupperware, we go through some salad!!) and behind that some lettuces.

Then the fruit drawer, then the veggie drawer. In the door are all our seasonings, condiments, and salad dressings, my choice of late has been a raspberry walnut dressing from Publix.  And yes, that is chocolate and strawberry syrups. I am planning what to do about that.

Whew! Ok, I just ate a bowl of cereal. My calories are way low for today, but I am satisfied right now and frankly, don't give a Darn.  <3 ya

Boring day.

I didn't have breakfast today. Just skipped it and went straight to brunch around 10.
